Quinoa patties with avocado dressing

In addition they are accompanied by a spicy dressing with habanero roasted pepper, with a base o avocado and cilantro and a touch of lime juice.

  • 1 1/2 cups quinoa, Cooked
  • 1 1/2 cups lentils, Cooked
  • 3/4 cups potato, Cooked
  • 1 cup fresh cilantro, finely chopped
  • 1/2 cups white onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups broccoli, cooked and cut into small trees
  • 1/2 cups ear corn, yellow
  • 1/2 cups tomato, cut into cubes
  • salt

  • 1 egg
  • 1/2 cups breadcrumbs
  • 5 tablespoons olive oil, to sauté the tortillas and for the dressing
  • 1 avocado, for dressing
  • 1/2 cups fresh cilantro, for dressing
  • 1/4 cups lime juice, for dressing
  • 1 Habanero chile, roast, for dressing
  • 1/4 white onions, for dressing

  • For the patties, process the quinoa together with the lentils and the potato until obtaining a homogeneous mixture.
  • Place the previous preparation in a bowl and mix with the cilantro, the white onion, the garlic, the broccoli, the yellow baby corn, the tomato and season with salt and pepper. Add the egg and the crushed bread, mix well and form your patties of approximately 30 grams with your hands.
  • Heat a pan over medium heat with a couple of tablespoons of olive oil and cook the patties until they are done and browned on both sides, remove from the pan and reserve hot.
  • For the dressing, blend the rest of the olive oil with the avocado, cilantro, limon juice, habanero pepper and onion, until you get a smooth dressing. Season with salt and pepper.
  • Serve the patties with a little dressing and salad. Enjoy
